100% Cabernet Sauvignon
The Cabernet-Sauvignon is planted over foothills, in clayish-calcareous soils, the structure of which is light and deep.
It is a capricious variety. We aim at reflecting the characteristics of the variety while avoiding green notes.
In order to tame its tannins, and sometimes its roughness it is aged in vat for 18 months (longer than the average ageing time in the region).
As a result it is ready for drinking as soon as it is released.
However can be kept for two or three years.
It is a wine for people who are familiar with tasting, who like complex wines
with strong personalities and also with a Mediteranean character.
